Lounès, my 20-month-old son, loves pancakes. And so it is at least once a week that I prepare him for his afternoon tea! I like to hear him say "mmmm", "still"! Here is the recipe tested and approved by my little tribe for fine and delicious pancakes!
- - 1/4 liter of milk
- - 60 g of butter
- - 3 eggs
- - 125 g flour
- - 20 g caster sugar
- - 1 pinch of salt
- - aromas according to your taste: vanilla, orange blossom water, etc.
• Heat the milk and butter together in a saucepan. • As soon as the butter is melted, remove the pan from the baking sheet, and let it cool down. • Beat the 3 eggs with a fork. • Put the flour in a fountain, add the beaten eggs, 20 g caster sugar, a pinch of salt, and mix with a whisk. Add what you want to perfume the dough: a net of natural vanilla extract, orange blossom water ... • Incorporate the milk-butter mixture little by little while whisking vigorously. The dough is ready. If it seems a little thick, add a little milk and reshuffle. With these proportions, I usually make about ten pancakes and it only remains to taste.
