  • For 4 people :
  • Galettes:
  • 200 g of black wheat flour
  • 40 cl of water
  • 1 pinch of salt
  • 1 knob of butter
  • Garnish :
  • 1 tray (150 g) of lamb's lettuce
  • 700 to 800 g of smoked salmon
  • 12 sprigs of chives
  • 4 pinches of fleur de sel from Guérande.
  • Vinaigrette :
  • 1 C. old wine vinegar
  • 3 c. oil soup
  • salt
  • pepper


Preheat your oven to 120 ° C (tea 4). Prepare the patties by placing flour and salt in a bowl. In the center, slowly pour the water by mixing with the whisk until a smooth paste, not too thick. Cook 4 patties in a buttered pan. As they are cooked, put them on the back of 4 big bowls turned to mold them in the shape of tulips. Place them as they are on the oven rack and let them dry for 1 hour in the oven. Let them cool and unmold. Cut the salmon into strips. Prepare the vinaigrette. At the last moment, mix lamb's lettuce, salmon and vinaigrette and divide into 4 tulips. Decorate chopped chives, sprinkle with fleur de sel and serve.
