Crispy Salmon with Christmas Glitter (9 pics)
Ingredients for 4 persons
4 pieces of salmon of 120 g
2 lemon juice
1 bunch of coriander and 1 tarragon
2 star anis
4 glasses of water
4 sheets of brick
4 c. Mascarpone
1 lemon with salt
4 sprigs of tarragon
Cut each piece of salmon in half. Jihanne is an expert.
Put them in a rimmed container.
Finely chop the onions.
Chop the herbs.
In a saucepan, gently melt the onions in a drizzle of olive oil. Jihanne applies
Add lemon juice and water.
Bring to a boil, then add the chopped herbs.
Add salt and pepper.
Pour this boiling mixture over the salmon.

Cover with a film and let cool.
Step 5: the crisps
Using stencils, cut out the brick sheets in the shape of stars, firs, balls ... Too easy for Marius!
Brush with olive oil.
Put them on parchment paper and bake for 6 minutes at 180 ° C.
Step 6: the lemon cream
Chop the tarragon leaves and lemon zests with salt.
Mix them with the mascarpone. Jihanne loves!
In each plate, make two dumplings of mascarpone cream.
Place the salmon on top and decorate with the pastry sheets stuck in the cream.
