Banana cream with coconut milk

Coconut milk, banana, pistachios and lime ... a recipe idea for an exotic dessert.


  • For 4 people
  • 1 C. cornflour
  • 2 eggs
  • 1 C. tablespoon of lime juice
  • 150ml of fresh cream
  • A few coarsely chopped pistachios for decoration
  • 2 tbsp. vegetable oil
  • 500 ml coconut milk Suzi Wan
  • 5 c. tablespoons sugar
  • 1 small packet of vanilla sugar
  • 1 pinch of salt
  • 2 small ripe bananas
  • 100 ml of milk


Bring coconut milk, sugar, vanilla sugar and salt to the boil.

Add the chopped bananas, remove the mixture from the heat and purée.

Mix the milk with the cornflour and the eggs then add them to the preparation.

Bring the cream to a boil without stirring. Pour immediately into a salad bowl, sieve and let cool, stirring occasionally.

Stir in the lemon juice and whipped cream when the cream is cool.

Serve in portions and decorate with pistachios.
